Mexican is definitely one of my favourite cuisines. I have never been to Mexico though (Yet! One day!) so my knowledge of Mexican food is based on what I’ve eaten at restaurants and recipes I’ve read. I can’t wait to try authentic Mexican food one day.
This recipe is my interpretation of Mexican food. It’s not authentic by any means. I’m pretty sure you would never find tofu in a taco in Mexico haha! But it actually works. The tofu adds great texture and also some extra protein to the meal.
This is also a totally vegan recipe. No dairy required! I made this delicious cashew cream with coriander to replace sour cream and it takes the dish to the next level.
