I must admit this is not exactly a wintery dish. It’s cold, it uses ingredients that would normally be in season in summer but who cares. It still tastes delicious and that’s all that matters.
These lettuce tacos are a great alternative to regular tacos. The humble lettuce leaves make these tacos much lighter and lower in carbs. They are kind of like a Mexican san choy bow. Haha!
I made a sort of mince out of crumbled tempeh and finely chopped mushrooms. I also made my own taco seasoning with cumin, paprika and oregano. Super easy! And finally I topped my tacos with a fresh tomato and corn salsa and mashed avocado (I was too lazy to make a proper guacamole).
