I first tried this dish a couple of years ago at a Spanish tapas restaurant and I tried to recreate it once or twice and I couldn’t get it right. Then I went back to that same restaurant just recently and they still had this dish on the menu! Of course I ordered it again and made sure to try and recreate it at home one more time. This time I was successful!
Chimichurri is an Argentinian sauce, which is kind of like a pesto, but it’s made with parsley and coriander. It’s spicy and tangy as well. It is traditionally served with meat but it also works amazingly with roasted sweet potatoes. I added a bit smoked paprika to my sweet potatoes to bring an extra layer of flavours. And the pumpkin seeds add a bit of a crunchy texture. I used a mortar and pestle to make my chimichurri but you can also just use a food processor. This is an awesome side dish for any meal!
