Ingredients
- 1 tablespoon coconut oil
- 2 dried chillies
- 1 cup white quinoa
- 1 brown onion finely chopped
- 3 garlic cloves crushed
- 1 carrot grated
- a handful of green beans whole
- 1/2 cup roasted cashew nuts
- fresh coriander to serve
- 1 teaspoon cumin seeds
- 1 teaspoon garam masala
- 1 teaspoon turmeric
- 5 cardamon pods
- 1 cinnamon stick
- 1 tablespoon grated ginger
Instructions
- Heat the coconut oil in a pan. Add the onions, garlic, ginger and spices (cumin, cardamon, turmeric and garam masala) and cook for 2 minutes
- Add the quinoa, dried chillies, grated carrot, green beans, cinnamon stick and 2 cups of water
- Cook for 15 minutes or until all the liquid has been absorbed
- Season with salt to taste, top with cashew nuts and fresh coriander leaves
