I must admit that breakfast is my favourite meal of the day. When people tell me they don’t eat breakfast I honestly can’t understand why. To me breakfast is super important! It sets me up for the day. Even on weekdays when I don’t have that much time in the mornings I still try to make something extra special for breakfast.
That’s why I love granola! You can easily make a big batch of it that will last the whole week. And there’s so many ways you can eat it. Sometimes I just use it as a topping for my porridge. I can also eat it with coconut yogurt and fruit. Or simply just a bowl of it with some veggie milk. It’s even amazing when eaten by itself!
This recipe is very simple. I used a mix of different nuts (almonds, cashews, hazelnuts, walnuts and macadamias) and seeds (pumpkin and sunflower). I also added some puffed spelt to add extra crunch and some goji berries and coconut flakes right at the end (these don’t need to be baked). But you can add whatever you want, really. It’s slightly sweetened with a small amount of maple syrup.
