Making your own vegan meatballs (or meatless balls as I prefer to call them) can seem like a big effort. Although it can take a bit of time to make them it’s actually really easy. It doesn’t really require any special skills in the kitchen. And one recipe makes a big batch which you can also freeze for later on if you’re not going to serve them all in one go.
This recipe has kale and chickpeas as the main ingredients. But the secret to make them taste amazing is this awesome spice mix called za’atar. I’ve had some of this in my pantry for quite a while and wanted to use it up. For those who don’t know za’atar is a middle eastern spice mix which usually contains some dried herbs such as thyme and parsley, spices like cumin, coriander and sumac, as well as sesame seeds. It’s incredible and it takes any dish to the next level.
You can serve these beautiful meat(less) balls with anything you like. This time I served them with a very simple tomato based sauce which I made with tomato passata, garlic, onions and fresh basil. And sprinkled with some organic pecorino cheese for extra flavour.
