Everybody needs comfort food every once in a while. But it doesn’t necessarily need to be something unhealthy. I’m a true believer that comfort food can be as satisfying as it can be good for you. You just have to make the right choices!
Even burgers can be healthy sometimes! As long as you pack them with loads of fresh and good ingredients.
I haven’t made a burger in a while and I was craving some the other day. So I thought I’d try a new recipe. I had a bunch of beetroots in my fridge so I decided to use them to make these vegan burger patties and paired them with lentils to add texture and a source protein and it worked perfectly. I also added some pumpkin seeds for extra texture and goodness.
You could honestly put anything in these burgers. When put them together I chose to use some fresh spinach, hummus, caramelised onions and sourkraut with a delicious wholemeal grain bun I got from a bakery.
This recipe makes at least 8 burger patties and they can be frozen for later. They can also be baked and don’t need to be fried.
