It has been a while since I have posted a recipe here. After a long holiday and lots of busy days at work I think I am finally back into blogging mode with lots of new recipe ideas in mind. I can’t wait to share them here.
So last weekend I was craving pancakes for some crazy reason. It’s not something I eat on a regular basis so I am not sure where this craving came from. In fact I had never made vegan pancakes before, this was my first attempt ever and I am quite proud of the result.
Lately I have been trying my hardest to avoid eating wheat. I am not intolerant to gluten or anything but I just feel so much better without it. So after doing some research on gluten-free pancake recipes I decided to go with buckwheat. I had never used buckwheat flour before and it tasted so much better than I expected. I really enjoyed the nutty flavour.
These pancakes are super healthy, there’s hardly any oil in them (I only used a little coconut oil to pan fry them) and they’re also processed sugar-free (make sure you use pure maple syrup – the artificial stuff is really bad for you!). I used banana as a binding agent in my recipe and served my pancakes with a silky cashew nut cream, a drizzle of maple syrup and fresh strawberries (which are in season at the moment in Australia!!!).
