As much as I love rice, unfortunately most of the time it puts me in a carb coma as soon as I eat it, especially white rice. Therefore I try to avoid eating it often. Quinoa on the other hand is much better for me. While it is high in carbs it just takes a little longer to break down and the sugars get absorbed slower. It is also a great source of protein and minerals.
Lately I’ve been trying to re-create traditional rice dishes using quinoa as a rice substitute and this is one of them. You can serve this biryani recipe with your favourite curry. I had it with my favourite red lentil dhal.
