This recipe has been in my list of “foods to try” for a long time. I don’t know why it took me so long to make it! I really didn’t know what I was missing.
I first came across this recipe on Deliciously Ella a while back and thought it would be interesting to bake a cake with sweet potato. I also liked the fact it doesn’t have any fats or processed sugars added to it. It is possible to make healthy and delicious vegan brownies! Who would have thought one could make brownies that are actually good for you and full of nutrition.
This weekend has been very gloomy in Sydney so I thought I’d entertain myself in the kitchen rather than venturing outside in the rain. And for that there’s nothing better than chocolate!!
I absolutely love this recipe. It’s so easy and quick to prepare. I must admit I was a bit scared at first thinking it might not work but the final result was amazing. I love the fudgy texture and flavour and I don’t think anyone would have guessed there is sweet potatoes in these brownies. I had to control myself not to eat the whole thing at once.
The original recipe calls for medjool dates. Unfortunately I couldn’t find any in my local store so I used a cup of dried dates that I had in my pantry as a substitute – I think it worked quite well. I also added some dried sour cherries for extra texture. I think next time I may add some chopped nuts like walnuts or pecans.
