Over the last year or so I have become more and more interested in the world of raw foods. It is such a crazy concept but at the same time it makes so much sense.
I even thought about going on a 30-day raw challenge, but I am not sure if I am ready for it. While I don’t think I would be able to commit to a 100% raw diet I still try to incorporate as many raw meals as I can to my lifestyle. Especially desserts!!
I have been trying to pimp my salads to make them more interesting, it’s amazing what you can do with just raw veggies. This pad Thai inspired salad is the perfect example, with zucchini noodles instead of the traditional rice ones. It’s so tasty and fresh, and it makes a great light meal.
You can make your zucchini noodles using a spiralizer (I don’t have one), or a julienne slicer which is what I used. Or if you don’t own either just a normal peeler will do, you will just have thicker noodles.
