This recipe is inspired by my recent trip to South America. I spent 3 weeks in Peru at the very start of my trip and I had this dish in one of the towns I visited. It was delicious so I have been planning to recreate it since then.
Surprisingly, Peruvian cuisine is highly influenced by Chinese cuisine due to the influx of Chinese immigrants over the years (I had no idea about this before visiting Peru). And this Peruvian-Chinese fusion is usually referred to as “chifa”. I noticed so many chifa restaurants everywhere I went in Peru.
Chaufa is a dish normally made with rice and meat. It is basically a fried rice. But in some regions in Peru quinoa (which is a very traditional andean ingredient) is used instead. My version is obviously vegetarian and I added some organic tofu for extra protein.
This is a very simple and straightforward dish, you can whip it up super quickly. I usually make a huge batch that will last me for a few days.
